Sweet Buttermilk Cornbread - 7"

If using Buttermilk powder, combine 2 T buttermilk powder in 1/2 cup of water.

Ingredients

  • 5/8 cups (3.65 oz) stone ground cornmeal (any color)

  • 1/2 cup (2.5 oz) all purpose flour

  • 1 1/2 t baking powder

  • 1/8 t baking soda

  • 1/8 t salt

  • 1/4 cup (2.0 oz) sugar

  •  

  • 5/8 cups buttermilk (1/2 cup + 2 Tbsp)

  • 1/2 egg, slightly beaten (by weight)

  • 2 T corn oil or butter

  •  

  • 2 t butter

Directions

  • Preheat oven to 400°F

  • Combine dry ingredients into large bowl

  • Combine wet ingredients into smaller bowl or measuring cup

  • Mix wet into dry until flour is moistened (batter will be lumpy)

  • Melt butter in 7” cast iron skillet

  • Pour in batter

  • Cook for 15-20 minutes or until GBD and toothpick comes out clean.
