White Chili

Suggested toppings:

  • Salsa
  • Grated Cheddar Cheese
  • Sour Cream
  • Bacon Bits
  • Tortilla Chips

Ingredients

  • 1 lb White Beans (soaked overnight - or canned)

  • 6 cups Chicken Broth

  • 2 cloves Garlic

  • 1 onion chopped

  • 1 tbsp oil

  • 2 - 4 oz jars Green chilies’

  • 2 tsp cumin (or chili powder)

  • 1 1/2 tsp oregano

  • a few dashes tabasco sauce

  • 1 lb diced cooked chicken, homemade or canned

Directions

  • Combine beans, broth, garlic and onions in a large pan. Bring to a boil.

  • Reduce Heat to a simmer. Simmer for 3 hours, adding more broth as necessary.

  • In skillet, saute 1 onion chopped in (1 tbsp) oil

  • Add chilies, cumin, oregano, and Tobasco sauce to onions. Mix thoroughly over heat.

  • Add onion mixture to beans.

  • Add 1 lb diced cooked chicken (canned or homemade)

  • Simmer 1 hour

  • Serve with toppings
