Satay
Any meat will do here. Don’t forget to marinate the meat for a few hours or overnight.
Components (see below)
Satay Sauce
Ingredients
12 medium fresh basil leaves (1 1/2 tbsp from squeeze tube)
1 1/2 tsp curry powder
1/2 tsp ground cumin
1/2 tsp ground coriander
crushed red chili flakes
1 tsp freshly ground black pepper
1/2 tsp kosher salt
3 tbsp vegetable/peanut oil
1 skinless, boneless chicken breast (about 8 oz)
Directions
Place bite sized pieces of chicken on skewers.
Pour marinade over the chicken skewers and place on grill.
Make sure chicken is well seared on both sides.
Remove from grill and serve.
Satay Sauce
Ingredients
1/4 cup coconut milk
1/4 cup smooth peanut butter
1/2 tbsp soy sauce
2 tsp sambal oelek (or 1/2 tbsp chili sauce or 1 tsp sriracha)
2 tsp brown sugar
1/2 tbsp lime juice
1 tbsp rice vinegar
1 tbsp vegetable/peanut oil
Steps
Add all ingredient to small sauce pan.
Whisk until smooth.
Heat until warm.
