Satay

Any meat will do here. Don’t forget to marinate the meat for a few hours or overnight.

Components (see below)

  • Satay Sauce

Ingredients

  • 12 medium fresh basil leaves (1 1/2 tbsp from squeeze tube)

  • 1 1/2 tsp curry powder

  • 1/2 tsp ground cumin

  • 1/2 tsp ground coriander

  • crushed red chili flakes

  • 1 tsp freshly ground black pepper

  • 1/2 tsp kosher salt

  • 3 tbsp vegetable/peanut oil

  • 1 skinless, boneless chicken breast (about 8 oz)

Directions

  • Place bite sized pieces of chicken on skewers.

  • Pour marinade over the chicken skewers and place on grill.

  • Make sure chicken is well seared on both sides.

  • Remove from grill and serve.

Satay Sauce

Ingredients

  • 1/4 cup coconut milk

  • 1/4 cup smooth peanut butter

  • 1/2 tbsp soy sauce

  • 2 tsp sambal oelek (or 1/2 tbsp chili sauce or 1 tsp sriracha)

  • 2 tsp brown sugar

  • 1/2 tbsp lime juice

  • 1 tbsp rice vinegar

  • 1 tbsp vegetable/peanut oil

Steps

  • Add all ingredient to small sauce pan.

  • Whisk until smooth.

  • Heat until warm.
